🌸 Edo-Style Sushi Behind Flowers

Sushi by Bou runs a Chelsea omakase speakeasy at 232 7th Ave, tucked behind the door of Bosque Flowers and Coffee. The front works as a flower shop and cafe, and the intimate sushi bar waits beyond it.

Two menus set the length of the night. The 12-course Signature Omakase covers the core experience, while the 17-course Bougie or Bou Reserve option goes longer. The fish gets Edo-style cured preparation, which lends it texture, and one diner singled out the chopped tuna and the wagyuni, a wagyu and uni piece. The room draws on 1920s Prohibition-era glamour with modern culinary artistry at the counter.

Arrive on time, with a bar ready for anyone who shows up early. The counter opens 5 PM to 11 PM Monday through Thursday and Sunday, and stays open until midnight Friday and Saturday. Handroll classes and private buyouts are also on offer for groups.
