Sushi by Bou - Chelsea NYC @ Bosque Flowers & Coffee

The front, a flower shop and cafe, conceals what one diner called a "cozy sushi bar." Inside, the experience is intimate, serving a 12- or 17-course omakase. The sushi uses edomae (cured) preparation, which lends the fish texture. Among the courses, the chopped tuna and the wagyuni (wagyu and uni) pieces stood out to one visitor. The setting draws on 1920s Prohibition-era glamour, blending vintage ambiance with modern culinary artistry. Arriving on time is advised; a bar offers a place to wait if early.
