Anthony Mangieri has been making naturally leavened, wood-fired Neapolitan pies since 1996, and he is still the person shaping them. There are no slices here and no menu of twenty things. You order a whole pie, it arrives blistered and soft in the centre, and you eat it with a knife and fork or you fold it and accept the consequences.

The service window is narrow and non-negotiable: Thursday, Friday and Saturday only, from 5pm, with the last reservation at 9:45pm. Three nights a week is the entire operation. If you are building a weekend around this, it has to be the anchor, not the backup.

Getting In Changed This Year, and Most Guides Have It Wrong

Heading into its thirtieth year in business, Una Pizza moved to reservations through OpenTable. Bookings open two weeks in advance at 9:00am Eastern. The restaurant's own explanation is that demand exceeds what it can produce while holding its standards, because Mangieri makes a limited number of dough balls each day, intentionally and by hand. That is the detail worth internalising: the ceiling is the dough, not the seat count. Toppings like burrata go on as the slice is being reheated, not before, which is why the queue advances in bursts rather than crawling. If you arrive and see fifteen people, that is roughly a twenty-minute proposition, not an hour.

The Other New York Names on the 2026 List

Don Antonio at 309 West 50th Street took sixth in the country, which makes it the highest-ranked New York room you can realistically walk into on a weeknight. Ribalta at 48 East 12th Street came eighth, works a wood-fired oven, and has been open since 2013 — it runs to midnight on Friday and Saturday, which no other top-ten New York entry does, so it is the one to hold for a late second dinner.
