This is the detail that sends people to the wrong address. Empanada Mama has five Manhattan locations and they do not keep the same hours. The Hell's Kitchen room at 765 9th Avenue, between West 51st and West 52nd, is open 24 hours, every day. So is the Lower East Side room at 95 Allen Street. Those two are the ones that hold up at 4am.

The others will not. Times Square at 200 West 40th Street runs 8am to 11:30pm Monday through Thursday and pushes to 12:30am on Friday and Saturday — useful after a show, useless after last call. The East Village branch on First Avenue is closed all day Monday and shuts at 11:30pm midweek. The Upper East Side room on First Avenue keeps its own schedule. If the plan involves anything past 1am, the decision is already made for you: Ninth Avenue or Allen Street, and nowhere else in the group.

Forty-plus fillings, three shells, one decision

The menu lists more than forty empanadas, and the number is genuinely paralysing at three in the morning. What cuts it down fast is knowing that the fillings are only half the menu. Nearly every one comes in wheat, corn or baked, and that choice is made at the counter rather than assumed. Wheat fries into a blistered, bubbled shell and is the one most people picture. Corn is coarser, sandier and holds heat longer, which matters if you are carrying it home. Baked is the lighter option and the one that suffers most from a long walk.

Prices are quoted per version rather than per filling — the wheat Viagra, the shrimp-and-crab one, sits at around $5.30, and the shell you pick moves the number. Two or three per person is a meal. The house names are not decoration: Viagra is tiger shrimp and crab meat, Reggaeton is Caribbean-style roast pork, the Cheeseburger is ground beef and cheddar spiced like the rest of the kitchen, and Romeo and Juliet — guava and mozzarella — is the dessert everybody forgets to order until they are back outside.

One more thing people miss: the sauces are separate. Green sauce, blue cheese and guacamole are ordered, not given. Nothing arrives with them by default, and an empanada eaten dry is a noticeably worse empanada. Ask for green sauce at minimum. If you are ordering for a group, ask for more than you think, because the kitchen portions them small.

What actually travels at 3am

There is a difference between what tastes best at the counter and what survives twenty minutes in a paper bag. The beef, chicken and spinach-and-cheese fillings are the sturdy ones — dense, dry enough not to steam the shell soft, and forgiving if you get distracted. The shrimp and crab is better eaten within sight of the fryer. Anything with a lot of cheese will set into a different texture by the time you are home, which some people prefer and some people do not.

The rest of the menu is doing more work than the name suggests. There are arepas, yuca fries buried under pulled pork and sauces, soups and full plates, and at that hour a bowl of soup and one empanada is often the smarter order than four pastries. There are margaritas and sangria too, which is worth knowing if the night is still going rather than ending.

The queue to avoid is not at 4am

Because the Hell's Kitchen room sits roughly five minutes' walk from the Broadway houses, the real crush is not the small-hours crowd. It is the window right after curtain, somewhere around 10:30 to 11:30pm, when several theatres empty onto Ninth Avenue at once and a restaurant with forty items and a fryer becomes a bottleneck. That is the hour to order ahead or walk a few blocks further. Come back at 2am and the same room is half empty, which is the entire point of a place that never closes — the food is the same, the wait is not.
