That schedule is the most important fact about the place, because it is a bagel shop in a city where a lot of people are not awake at eight and where nothing else about the day suggests a two o'clock deadline.

Two o'clock is a hard stop and popular items go before it. If the guava bagel is the reason for the trip, a mid-morning arrival is a plan and a one-forty-five arrival is a gamble. The Tuesday closure catches out people who checked the hours on a different day and assumed they were the same.

This is a morning business in the proper sense — it starts baking early, sells what it makes, and stops. That is how most good bagel operations work and it is the opposite of how most Miami food businesses work.

What is actually on the board

The EB Original runs around $9: scallion cream cheese, roasted jalapeños and thick-cut bacon. The Avo Spesh is around the same. The Lox Supreme uses locally smoked lox rather than a national supplier, which is a meaningful distinction in a coastal city.

The King Guava is the one that says the most about where this shop is. Guava marmalade and papitas — the crushed potato sticks that go on Cuban sandwiches — on a bagel is not a New York idea and was never going to be. It is a Miami bagel, and it is very good.

Bacon, egg and cheese is available on any of the bagels and is the default order for a lot of the regulars. It is the least interesting thing on the board and it is also, correctly, the thing most people want at eight in the morning.

The bagels themselves

Boiled and baked properly, with a blistered crust and a dense chewy interior rather than the soft bread-roll texture that most non-New York bagels default to. That is the entire technical argument and it is the reason a bagel shop in Miami got any attention at all.

There is a long and tedious debate about whether a bagel outside New York can be good, usually involving assertions about water. It is not really about the water. It is about whether the dough is fermented properly, boiled rather than steamed, and baked hot, and those are decisions rather than geography.

This shop makes those decisions correctly. It is not pretending to be a New York bagel and the toppings make that obvious, but the base is built to the same standard.

Where it is, and what MiMo is

6910 Biscayne Boulevard sits in the MiMo Historic District, which is the stretch of mid-century modern motels and low commercial buildings along Biscayne north of the Design District. It is one of the more architecturally distinctive parts of Miami and one of the least visited by people staying on the beach.

That makes a morning here work as more than a bagel run. The district is genuinely worth walking — the motel signage alone is a reason to be there with a camera — and Panther Coffee has a room at 6407 Biscayne a few blocks south, which makes a coffee-and-bagel morning a short walk rather than a drive.

Parking is on the boulevard and in small lots and is not difficult, which is worth noting in a city where it usually is.

How it fits into eating cheaply here

Nine dollars for a loaded bagel is not the cheapest breakfast in Miami and is not close. The ventanitas along any Cuban commercial strip will sell you a cortadito and a pastelito for a fraction of it, and that is both cheaper and more local.

What this is instead is a specific thing done properly at a fair price, in a city that has very few of them at breakfast. Most cheap breakfast in Miami is either Cuban and excellent or hotel and terrible, with not much in between.

The sensible approach is to treat the two as different meals rather than as competitors. A cafecito at a window costs almost nothing and takes two minutes. A bagel here is a sit-down morning that takes an hour and involves a walk through the MiMo district. Both are worth doing and neither replaces the other.
