Breakfast in North Beach is not a quality problem. Everything here is good and much of it has been good for fifty years or more. It is a scheduling problem, and it has two distinct failure modes: turning up to the famous sit-down breakfast at ten on a Sunday and joining a queue that wraps around the square, or turning up to the neighbourhood's best bakery at noon and finding the shutter down because it sold out. Forty minutes of timing solves both.
One bakery here sells out rather than closing and one room has a queue that doubles between nine and ten, so breakfast is decided before you leave the house. Tell Karpo the hour and it will tell you what is still possible.
The one that sells out
Liguria Bakery at 1700 Stockton Street, on the Filbert Street corner facing Washington Square, sells focaccia and nothing else — plain, rosemary, raisin, jalapeño cheese, and a red-sauce-and-green-onion version. It closes when it sells out, which is usually around midday rather than at any advertised hour.
As breakfast this is a strange and excellent proposition: warm bread by weight, wrapped in white paper, eaten on a bench across the road. It costs very little, it has been running the same way for generations, and it is entirely dependent on getting there before eleven. The rosemary is the one to buy if you buy one.
The espresso house that opens at seven
Caffe Trieste at 601 Vallejo Street opened in 1956 as the first espresso house on the West Coast, and the Giotta family effectively introduced espresso culture to San Francisco through this room. It runs 7am to 3pm Sunday through Wednesday and 7am to 8pm Thursday through Saturday.

The 7am opening is the useful part. This is the address for a breakfast that starts genuinely early, before the neighbourhood has woken up and before any queue exists anywhere. It is a room built for sitting in for an hour rather than for efficiency, which at half past seven in the morning is exactly right.
The pastry end
Butter & Crumble at 271 Francisco Street is a French bakery toward the Fisherman's Wharf side, and the croissants are the reason: cardamom sugar versions piped full of pistachio cream, and swirled ones dotted with bacon bits and topped with a gooey egg yolk. Plan to wait in line — that is simply part of it here.
Stella Pastry & Cafe at 446 Columbus Avenue is the older tradition, making sacripantina — a rum-soaked, zabaglione-layered Northern Italian cake — since 1942, alongside cannoli and tiramisu. Seating is very limited and the established local behaviour is to carry the box to Washington Square Park, which is three minutes away.
The sit-down version, and its queue
Mama's on Washington Square at 1701 Stockton Street is the neighbourhood's famous full breakfast, and the queue outside it is a permanent feature of weekend mornings here. It is genuinely good; it is also a commitment, and the wait is not a rumour. If a proper sat-down breakfast is the plan, go on a weekday, or go early enough that early feels excessive.
The general rule for this neighbourhood: the queue at any given address roughly doubles between nine and ten in the morning at weekends, and halves again after about half past eleven. If you cannot be early, being late is the better of the two remaining options.
Choosing
Before 8am, and you want to sit: Caffe Trieste. Before 11am, cheap, outdoors: Liguria, then the park. A pastry worth queueing for: Butter & Crumble. Something old and sweet to take to the square: Stella. A full sit-down breakfast, and you have accepted the wait: Mama's, on a weekday if you can.
