Liege Waffles Turn Pearl Sugar Into a Crisp Crust

Taste a Berkeley recipe refined through more than 600 tests before the shop opened.

Start with the dough.

🧇 Dough Comes First

Make your first order at Little Gem Belgian Waffles about the dough. At this Berkeley specialty shop, the Liège style means a brioche base with a caramelized crust and a chewy center. The sweetness runs through the waffle, with Belgian pearl sugar baked into the mix leaving molten pockets inside.

The shop was established as the original Liège waffle specialty shop in the Bay Area. The bakers trained in Belgium and at the San Francisco Baking Institute before founding the shop in 2015. Getting the technique right took nearly a year of testing, with more than 600 recipe versions tried before the doors opened.

The team handcrafts the waffles daily in small batches using natural ingredients and yeast rising dough. Find the shop at 2468 Telegraph Ave in Berkeley, and make the waffle itself the starting point for your order.
