Established in 2015 as the Bay Area’s original Liège waffle specialty shop, Little Gem was founded by bakers trained in Belgium and at the San Francisco Baking Institute. Nailing the technique took nearly a year of testing over 600 recipe versions before opening doors. The waffles are handcrafted daily in small batches from yeast-rising dough and natural ingredients, with pearl sugar baked straight into the mix to leave molten sweet pockets tucked inside.
