🍳 Watch the Kitchen Work

Carson Kitchen puts caviar on deviled eggs and Buffalo blue beurre blanc alongside pork belly. The menu leans into creative small plates, with thoughtfully crafted cocktails following the same approach. You are eating inside the repurposed John E. Carson Hotel, a mid century building in Downtown Las Vegas. Cory Harwell and the late Chef Kerry Simon founded the restaurant in 2014.

The contemporary bar and community tables give the room more than one place to settle in. For a closer look at the cooking, the space includes an open kitchen expo counter where guests can watch the staff work. An outdoor rooftop patio takes the meal beyond the dining room.

Head to 124 S 6th St for daily opening at half past eleven AM, with closing at 10 PM Sunday through Thursday and 11 PM Friday and Saturday. Reservations are available through the restaurant website.
