Caribbean Tasting Menu With Barbadian Roots

At Kabawa in Manhattan, Chef Paul Carmichael draws on his Barbadian roots for a Caribbean tasting menu developed in partnership with Momofuku. The restaurant occupies 8 Extra Place, where custom mosaics and instrumental music accompany dinner. Dinner follows a set menu with choices and begins with roti served with various accompaniments. Dishes include goat curry, spicy shrimp, and bass in curry. Mains arrive alongside carefully prepared sides, while Caribbean drinks extend the menu's regional focus. The portions are hearty, and the service follows a fine dining style. The restaurant serves dinner Tuesday through Saturday and closes on Sunday and Monday. Service ends at 10 PM on each operating evening.
