🍣 Aqua Farms to Lexington Avenue

Wokuni puts the supply chain on the plate. The Manhattan sushi restaurant at 327 Lexington Avenue is run by Tokyo Ichiban Foods, whose integrated seafood processing and distribution network reaches back to its own aqua farms in Japan. The menu holds steady on fresh sushi and sashimi, and the Kaizen Don arrives generous with quality rice.

The modern, comfortable dining room handles a casual weeknight and a special occasion equally well, with smooth, attentive service setting the pace. Lunch and dinner split into two windows, half past eleven AM to quarter to three PM and 5 PM to quarter past nine PM Monday through Thursday and Sunday. Friday and Saturday stretch the evening to quarter past ten PM.

Sourcing stays close to the plate here without turning dinner into a lecture, which is the rare trick of a sea to table kitchen.
