Bar Flores is up on the Echo Park hillside above Sunset, and the first thing that registers is that it does not feel like a cocktail bar built by a hospitality group. It feels like somebody's front room, if that person happened to run one of the better beverage programmes in Los Angeles. That is roughly the situation: it is Karla Flores-Mercado's bar, the drinks are hers, and the whole thing is pitched at the neighbourhood rather than at a citywide audience.
Bar Flores builds its cocktails around whatever produce came in that week, so the list moves and the best drink is rarely the one somebody recommended. Ask Karpo what is on tonight.
A female-led programme, and why that shows
Los Angeles cocktail bars are overwhelmingly run by men, and a bar whose beverage director and driving force is a woman is still, in 2026, notable enough that people mention it. What is more interesting is how it reads in the glass: the drinks here tend toward brightness, acidity and freshness rather than the spirit-forward, barrel-aged, stirred-and-heavy register that dominates the city's better-known rooms.
That is a genuine stylistic difference rather than a marketing line. If you have been drinking your way through Los Angeles cocktail bars and everything has started to taste like variations on a negroni, this is the corrective.
Market-driven means the list moves
The cocktails are built around fresh produce, and the list changes as what is available changes. In practice that means stone fruit in summer, citrus through the winter, and a rotating cast of herbs and vegetables that would not appear on a conventional bar's list at all. Asking what came in this week is a real question with a real answer.
The corollary is that the drink somebody told you about six months ago has probably gone. That is a feature. Describe what you feel like — something sharp, something long, something bitter — and let the bar route you toward whatever the produce currently supports.
The room and the patio
It is a small, warm, comfortable space with a patio, tucked into the hill rather than fronting onto the boulevard, and it is considerably more relaxed than its Sunset Boulevard address suggests. Plants, soft light, and a general absence of the hard-edged design that the last decade of cocktail bars has settled into.
That makes it good for a particular kind of evening: two to four people, a conversation, three drinks, no plan afterwards. It is not a pre-club bar and it does not want to be.
Where it sits in Echo Park
This stretch of Sunset is one of the most concentrated runs of bars, restaurants and music venues in Los Angeles, and Echo Park Lake is a few minutes north with a genuinely good walking loop around it. There is a lot to build an evening from within a few blocks in every direction.
Parking on Sunset itself is difficult and the residential streets above are permit-restricted in places, so read the signs carefully or take a rideshare. The neighbourhood is one of the few in Los Angeles where walking between four or five places in a night is realistic.
Timing and value
Early evening is the calm, conversational version and is when the bar has time for you. It fills later, particularly at weekends when the Sunset strip is busy. Any early-evening pricing offer moves around, so check what is currently running rather than assuming — and if there is one, it is the best-value way into a room where the drinks take real work to make.
What to order if you are not sure
Two useful defaults. If it is warm and you want something long, ask for whatever the bar is doing with the current fruit over ice — that is where a market-driven programme puts its best work, and it is usually the drink the bartender is most pleased with. If it is cooler and you want something with more weight, ask for their version of a classic; a bar with this much fresh-produce infrastructure usually has an unexpected twist on a daiquiri or a margarita that is better than the original.
What not to do is read the list twice, panic and order a gin and tonic. The whole value of a bar like this is in the drinks that only exist here this month.
The group behind it
Bar Flores sits within a small Los Angeles hospitality group that also runs a couple of other bars across the city, and Flores-Mercado runs the drinks across all of them. That matters practically: it means the programme here is not an isolated effort but part of a set, and the standard is maintained by someone who does this professionally at scale rather than by whoever is behind the bar on the night.
It also means that if you like what is happening here, the group's other rooms are worth knowing about — they are quite different in feel but share the same underlying approach to a drinks list. Ask at the bar; the staff will tell you.
Eating around it
There is bar food rather than a kitchen, so this works best as the drinking half of an evening with dinner attached to it. Echo Park has an unusually dense run of good, unpretentious food within a few minutes — Filipino, Mexican, Thai, Italian, and a couple of long-standing neighbourhood institutions — and almost all of it is cheaper than the equivalent on the Westside.
The pattern that works: eat first somewhere on Sunset, come here for two or three drinks, and walk the lake loop afterwards if the night is mild. That is a genuinely good Los Angeles evening and it involves no driving between stops, which in this city is close to a novelty.
