Operating as a pop-up series, creative agency, and cultural hub, Istorya explores the evolution of Filipino cuisine through its layered history—drawing on Chinese, Spanish, Muslim, Mexican, American, Malay, Japanese, and Indian influences. Courses modernize home comfort foods while exploring lesser-known regional traditions, including dishes from Zamboanga and Sulu, with the chef presenting the background behind each plate. Alongside periodic dinner installations, the team also stages private chef dinners and large-format catered gatherings.
