The result tastes of grilling rather than of frying. It is closer to a backyard barbecue than to a diner griddle, and whether you prefer it is genuinely a matter of taste rather than quality. What is not in question is that it is different, and in a category defined by sameness that counts for something.
The Los Angeles locations and their hours
The downtown location at 888 South Hope Street runs from ten in the morning until half past nine, seven days a week. The Figueroa Street shop in Eagle Rock runs to half past nine most nights and ten on Friday and Saturday. The Century Boulevard location closes at nine.

North Hollywood on Lankershim runs latest of the main city locations, to half past eleven Monday through Saturday and eleven on Sunday. And the location at LAX on World Way runs from half past four in the morning until half past ten at night, which is an airport schedule and genuinely useful if you are on an early flight.
What to order
The Charburger is the reference and the item the chain is built on, and ordering anything else on a first visit means you have not tested the thing that makes this place different. Add avocado if you want the version most regulars default to.
The tempura green beans are the sleeper item and the one people are surprised by, and the salads are unusually serious for a burger chain — this is a company that grew out of California and the menu reflects that rather than being a burger operation with an obligatory salad attached.
Where it sits between categories
This is fast casual rather than fast food in the drive-thru sense. Food is cooked to order, there is a real wait of several minutes, and the price sits above a value menu and below a restaurant. That positioning is the same one Super Duper occupies in San Francisco and Shake Shack occupies nationally.
In Los Angeles specifically, the competition is fierce. In-N-Out is cheaper and faster with a cult attached, the smash burger operations are trendier, and the city's taco and Korean options are better food at similar money. The Habit's argument is the chargrill, and it only lands if that is what you want.
The airport location, specifically
Four thirty in the morning to half past ten at night at LAX is a genuinely useful piece of information. Airport food at that hour is either closed or terrible, and a chargrilled burger before a six in the morning departure is a considerably better start than whatever the terminal offers.
Airport pricing applies, as it does everywhere airside, so it is more expensive than the same order in the city. That is the standard trade and it is worth it at half past four in the morning in a way it is not at two in the afternoon.
How the chain fits an LA week
It works best as the answer to a specific question: where can a group with different preferences eat quickly, reasonably cheaply, without anybody being unhappy. The burgers satisfy the burger people, the salads are genuinely good, and the price does not require a discussion.
It does not work as a destination and nobody should drive across Los Angeles for it. The locations are spread widely enough that the nearest one is usually reasonable, and that convenience is a substantial part of the value.
The flame-grill trade-off
There is a cost to the method and it is worth stating. A chargrill is slower than a flat-top, harder to keep consistent across a shift, and produces more variation between one patty and the next. That is why almost nobody at this scale does it and why the wait here is longer than at a drive-thru.
On a good day that variation works in your favour and you get a patty with genuine char. On a busy one it can go the other way. Consistency is the thing the flat-top buys and this chain has chosen to trade some of it for flavour, which is a defensible decision but not a free one.
Practical notes
Check the specific location's hours rather than assuming, because they vary considerably — nine at night in one part of the city and half past eleven in another. The company's own site and app carry the accurate times.
Order ahead if you are collecting at peak. Because the food is cooked to order over a grill rather than held, a walk-in at the lunch rush means a real wait, and the ahead-ordering flow bypasses most of it.
