There is also a thinner, leaner option for smaller appetites, and an extra-thick bone-in cut that appears on some nights and needs to be asked about. If you want the fattest, most flavourful end, say so when the trolley arrives: the carver can serve you from the outside of the roast, which carries the seasoned crust, or from the centre, which is rarer and leaner.
