Masa is nixtamalised in house from heirloom corn sourced from particular growers, which is the single most important technical decision in the kitchen and the one that most determines whether the food tastes of anything.
Around that core, the menu applies the apparatus of a modern tasting restaurant: many small courses, precise plating, a wine and beverage programme built course by course. The technique is contemporary and the vocabulary is Mexican, which is the opposite arrangement from most high-end fusion.
What a night there involves
