Whether the shape survives delivery

The obvious question with a pizza built around structure is what happens when it sits in a box for twenty-five minutes, and the honest answer is that the star loses more than a flat round does.

The sealed points hold steam. In a closed box that steam has nowhere to go, so the crisp exterior of each point softens and the ricotta inside goes from warm and loose to heavy. The centre of the pie fares about as well as any thin crust does, which is to say acceptably.
