Daniele Uditi, who is from Naples, hand-kneads the dough and proofs it for two full days before it is used. That is roughly double the standard for a Neapolitan-style pizzeria and it is a deliberate cost — dough at that timescale needs space, temperature control and planning that a same-day operation does not.

What you get for it: yeast has time to work slowly at low temperature, which develops flavour compounds a fast rise never produces; gluten relaxes, so the dough stretches thinner without tearing; and the starches break down enough that the finished crust is markedly lighter to eat. This is why a Pizzana pie sits differently than a same-day pizza of identical size.

The style is what Uditi calls Neo-Neapolitan — cooked in a wood-burning oven, with the puff and spotting of a Neapolitan rim, but built to hold its structure rather than collapse into a wet centre. Tomatoes are imported from Italy and the fior di latte comes from Southern Italy, while the produce for toppings is sourced from Southern California.

The classes

Pizzana runs a programme of events alongside the restaurants, including adult classes and kids' classes, plus bingo and trivia nights. Which of these run at which location varies, and the schedule is not printed on the menu — the reliable route is to contact the restaurant directly or check the events listings rather than turning up expecting one.

If you are going to do one, do the adult class with someone who cooks. The value is in the handling — how a two-day dough feels compared to a one-day dough, how much you can stretch it before it thins, how quickly it goes from pale to charred at high heat. Those are things that do not transfer from a video.

The kids' classes are the better group activity for a family visit, and they are the reason to consider the Saturday noon opening rather than an evening booking.

How to eat it

Order one pizza per person and share across the table rather than ordering per-person and eating individually — the pies are thin and the whole point is the comparison between them. Two contrasting builds tell you far more than two of the same.

Eat it immediately. A high-hydration, long-proofed dough is at its best in the first three or four minutes off the peel and it softens noticeably after that. If you are at a table of six waiting for everything to arrive before starting, you are eating a worse version of the pizza than the kitchen sent out.

The happy hour window is also the quietest service. A 4.30pm arrival on a Tuesday will get you a table without a wait and the same dough as a Saturday at 8pm.

Comparing the three locations

Pizzana opened in Brentwood in 2017 and there are now West Hollywood and Sherman Oaks rooms as well. The dough programme is the same across them, which means the pizza is genuinely comparable — but the rooms are not, and picking the wrong one for the occasion is the usual mistake.

Brentwood is the original and the most residential in feel, which makes it the easiest for an early dinner or a family visit, particularly with the Saturday and Sunday noon openings. West Hollywood sits in a busier, later-running part of the city and reads more as a night out. Sherman Oaks serves the Valley and is the practical choice if crossing the hill at 7pm is the alternative.

If you are testing the kitchen for the first time, Brentwood at happy hour is the lowest-friction version: same dough, half-price wine by the glass, and a table without a wait.
