If you have come from a Naples-obsessed pizza culture this will read as wrong. Judge it on its own terms and it is extremely good.
The toppings follow the same logic as the rest of the kitchen: fewer things, stronger things. Lamb sausage with peppers and fennel. Guanciale with tomato and chilli. Wild nettles and mushrooms when the season allows. Confit tuna. There are no pepperoni-and-extra-cheese options because that is not the argument the restaurant is making, and asking for one is how you find out about the other thing Gjelina is famous for.
The no-modifications rule is real
Gjelina has, for most of its life, declined to make substitutions or modifications to dishes, and it has said so in writing on the menu. This became briefly famous in 2013 when a note explaining the policy to a high-profile diner circulated widely, and the restaurant has never really walked it back. The practical version: order what is written, or order something else. Genuine allergies are handled — that is a different conversation and the staff take it seriously — but 'can I get that without the anchovy' is not going to land.
This is worth knowing before you sit down with a picky group. It is not rudeness and it is not a stunt; it is a kitchen that builds dishes as fixed compositions and does not want to disassemble them at the pass during a full service. The room, the patio, and where you actually want to sit
The dining room is dark — dark wood, low light, long communal tables down the middle — and it is loud once it fills. The back patio is the opposite: covered, strung with light, considerably calmer, and the place every regular asks for. You cannot request it with any certainty, but asking costs nothing and on a mild evening it is a materially better meal. The bar seats are the third option and the most under-used; they are first-come, they turn over, and they are the realistic route in for two people without a booking.
What else to order, and why the vegetables matter
Ordering only pizza here is a legitimate choice and also a slightly narrow one, because the dishes that made Gjelina's reputation are the vegetable plates and they are engineered to be shared alongside. The roasted vegetable section of the menu is long, changes with what is available, and includes things that sound plain on paper and are not — charred broccolini with anchovy and chilli, roasted carrots with dates and pistachio, grilled cabbage. These are the dishes other Los Angeles restaurants have been copying for a decade.
The sensible table order for two is one vegetable, one pizza, and one more thing — a pasta, a plate of charcuterie, or the fritto misto if it is on. For four, two vegetables and two pizzas covers it without over-ordering, which is easy to do because everything arrives when it is ready rather than in courses. Reservations go quickly and the prime slots between seven and nine are the first to disappear.
