Hill Country Boot Bar: Flatiron Country Bar With a New Stage
Hill Country at 30 W 26th St in Flatiron has a downstairs Boot Bar with live music most nights. Walk-ins order at the counter, and tables book on OpenTable.
Hill Country Barbecue Market, at 30 W 26th St between Broadway and Sixth Avenue, hides a country bar under its smokehouse: the downstairs Boot Bar, which hosts live music most nights of the week. The restaurant reopened in early October 2026 after closing for nearly two months, and it came back with new smokers and an enlarged stage. If your search for a country bar near me started in Flatiron or NoMad, this is the one where brisket and a two-step share the same address.
From Texas Hill Country to West 26th Street
The about page tells the origin plainly: in 2007, Marc and his wife and partner Kristen opened Hill Country at 30 West 26th Street. The name comes from the Texas Hill Country, the limestone region west of Austin, and the about page credits Central Texas butcher-shop traditions and family trips to Lockhart for the meat-market style: barbecue sold by weight and eaten off butcher paper. Nearly two decades later, the Flatiron room is the only location listed on the official site.
The October 2026 reopening, reported by the NYC BBQ newsletter on October 9, was the biggest change in years. The team closed for nearly two months to install new M&M smokers in the kitchen and to build a new, enlarged stage in the Boot Bar downstairs. For regulars, that means the barbecue upstairs and the music downstairs both got a reset at the same time.
The Boot Bar downstairs
The Boot Bar is described on the official site as a private bar with a live music stage and room to two-step. It seats 100 and holds 150 to 200 standing, which makes it larger than most Manhattan honky-tonks and big enough for a proper dance floor once tables are cleared back. The cowboy boots hanging above the bar came from Allen's Boots in Austin during the original 2007 buildout, and they gave the room its name.
The restaurant's FAQ says the Boot Bar hosts live music most nights of the week alongside happy hour drink specials. The lineup itself is not printed on the site, so the stage might feature a honky-tonk band one night and a songwriter the next. That is part of the appeal: you come for barbecue, and the music is a bonus rather than a ticketed event. The new stage built during the 2026 closure gives the bands more room than the old setup, and the open floor in front of it is where the two-steppers gather once the first song with a shuffle beat starts.

What to order from the counter
Hill Country is a counter-service market, and the FAQ says walk-ins are welcome at the counter. The essential order is the prime brisket, which you choose either moist or lean; moist is the fattier cut from the point and is the reason people come back. The Big Shorty is a Nam Jim style beef short rib, sold by the pound and sliced to order, and it is the order a whole table shares.
For sides, the Longhorn cheddar mac and cheese is the obvious pick, and the banana pudding is the dessert that closes most meals. The menu also lists birria nachos, a good bar snack to share downstairs during a set. The market menu online has no prices, though the catering menu does: prime brisket for ten is $125 and a tray of banana pudding is $45.
Booking a table or just walking in
Two systems work here. Tables can be reserved online through OpenTable or by calling (212) 255-4544, which is the right move for a group or for a Friday night when a band is booked downstairs. Solo diners and couples can skip the booking and walk straight to the counter, order by weight and find a seat in the dining room or downstairs near the stage.
For birthdays and office parties, the Boot Bar can be booked as a private space, and with up to 200 standing, it is one of the few places in Midtown South that can host a large country-themed party with its own stage. Ask about the space when you call, and mention the date early, since weekend nights fill first.
When to go
Weekday lunch, when the doors open at noon, is the quietest time to eat brisket, but it is not when the Boot Bar comes alive. The site promises live music just about every night, so plan an evening visit and eat before the set; the market counter closes an hour before the restaurant, which closes at 10pm Monday to Thursday and at 11pm on Friday and Saturday. Sunday is the shortest day, ending at 9pm, so it suits an early family dinner more than a night out.
If the counter line snakes toward the door on a Friday, the wait usually moves faster than it looks, because nobody is seated by a host. If the Boot Bar is at capacity or closed for a private event, The Waylon is a short taxi ride west and stays open far later, with bands on Friday and Saturday nights.
A walk around Madison Square Park
Hill Country sits two blocks west of Madison Square Park, which runs between Madison and Fifth Avenues from 23rd to 26th Streets. Walk over after dinner to see the Flatiron Building at the southern tip of the park and the clock tower of the old Metropolitan Life building across Madison Avenue lit up at night.
The surrounding blocks of West 25th to 28th Streets border the flower district, which is centered on West 28th Street between Sixth and Seventh Avenues, and the rest is now hotels, offices and restaurants. A slow loop around the park and back to West 26th Street takes about twenty minutes, enough time to make room for banana pudding before the band starts.
