Coral Gables Japanese Bakery STAND.: $3.50 Shio Pan Rolls
STAND. at 98 Miracle Mile bakes milk bread for $3.50 shio pan and $11.95 egg sandos. It opens Wednesday to Sunday 8 am to 4 pm and items can sell out early.
STAND., at 98 Miracle Mile in Coral Gables, is the closest thing Miami-Dade has to a neighborhood Japanese bakery café of the kind you find near train stations in Tokyo. Everything on the menu starts with a house-made milk bread: it is rolled around butter for shio pan, sliced thick for toast and cut crustless for sandos. The café comes from the team behind Shingo, the Michelin-starred omakase counter, and it is small, busy and best visited early.
A Daytime Café From the Shingo Team
STAND. opened on Miracle Mile in June 2026. Its own story page says that the team behind Shingo, Miami's Michelin-starred Japanese restaurant, wanted something more casual and just as intentional. The site says the café is rooted in yatai culture, the open-air food stalls of Fukuoka where seats were few and food was simple, and it describes the room as a nod to the kissaten coffee shops of Tokyo.
That makes STAND. a hybrid. It is a bakery in the sense that the bread is the base of everything, but it is also a matcha bar and a lunch counter with bento boxes. The Infatuation, reviewing it in September 2026, rated it 7.9 out of 10 and singled out the chicken katsu sando, while warning that the narrow room is cramped. Time Out's August review noted that popular items tend to sell out quickly.
The point for a bread lover is the milk bread itself. It is soft, slightly sweet and crustless when used for sandwiches, the style that Japanese convenience stores and bakeries have turned into a national habit.
Shio Pan and Onigiri at the Counter
The official menu describes shio pan as rolled milk bread, and the regular version costs $3.50. It is the Japanese salt-butter roll: a spiral of soft dough baked around butter so the bottom crisps and the top gets a pinch of flaky salt. Four filled versions cost $3.95 each, cream pan, chocolate pan, curry pan and sausage pan.
If you are new to these, buy a plain one and a curry pan together. The plain roll tells you how good the butter and dough are, and the curry pan is the savory classic of every Japanese bakery shelf. Both travel well if you plan to walk Miracle Mile afterward.
Onigiri sit next to the bread at $3.95 each. The salmon version mixes salmon with mayonnaise and salted seaweed, the tori gomoku is a seasoned chicken and vegetable rice, and the konbu is filled with simmered kombu. A roll plus a rice ball makes a fast breakfast for under $8.

Sandos, Toast and Bento
The sandos are all made between slices of the house milk bread. The egg salad sando and the fruit sando, with fresh strawberries, house strawberry spread and a lightly sweetened mascarpone chantilly, are $11.95 each. The BLT, with kosho-kewpie mayonnaise and extra-thick bacon, is $14.95. The chicken katsu sando stacks two crispy cutlets with shaved cabbage, kewpie mayonnaise and tonkatsu sauce for $15.95, the same price as the pork tonkatsu.
For something bigger, the wanpaku sando is $18.95 and combines a chicken cutlet, egg salad, bacon, romaine and tomato. At the top of the list, the wagyu sando with Australian wagyu filet mignon is $44.95.
Thick-cut toast is $9.95 in four styles. The BEC bakes the milk bread with a jammy egg in cheesy miso béchamel and bacon, and the sweet potato and honey toast is brûléed on top. Bento boxes start at $18.95 for karaage, chicken katsu, tonkatsu or tofu, and come with rice, miso soup and three sides of the day.
Matcha and Coffee
Matcha gets its own section on the menu, with the cultivar and harvest listed. The Kyoto okumidori first-flush matcha is $5.95 as usucha, $6.95 as a latte and $8.95 as a double. The organic Kagoshima yabukita costs a dollar more at each size. Hojicha from an Uji blend starts at $4.95.
The signature 16-ounce drinks are $7.95. The matcha version layers Kyoto matcha with strawberry purée and a mascarpone cloud, and the hojicha version uses Okinawa sugar, mascarpone cloud and kinako. Coffee is a single-origin Guatemalan, from a $3.95 espresso to a $6.95 cold brew. Alternative milks and house syrups add $1.
How to Order Without Waiting
The café is tiny, and the house rules are simple. The site says walk-ins are welcome and no reservations are needed, and it suggests ordering ahead online for pickup to skip the line. The menu also asks for no substitutions on any item.
Because popular items can sell out, the safest plan is to come soon after the doors open, especially on weekends. The Infatuation's advice was to treat STAND. like a takeout operation, and that is sound: the seats are few, and a bag of shio pan and a katsu sando are easy to carry to a bench.
Walking Miracle Mile and Downtown Coral Gables
Miracle Mile is the main shopping street of downtown Coral Gables, lined with arcades, cafés and the Actors' Playhouse in the old Miracle Theatre. From STAND., walk west along the Mile toward Ponce de Leon Boulevard, then turn north one block to Aragon Avenue. Books & Books, the independent bookstore at 265 Aragon Ave, sits in a 1920s Mediterranean-style building with a courtyard café. A few doors along, the Coral Gables Museum at 285 Aragon Ave occupies the city's former police and fire station.
For a longer stroll, keep heading west to the far end of Miracle Mile, where Coral Gables City Hall, a Mediterranean Revival landmark, faces LeJeune Road. Walking back along the Mile makes an easy loop of about 45 minutes and leaves room for a second matcha.
