There is no such thing as the best tacos in LA, and the reason is not diplomacy. Los Angeles does not have one taco tradition competing at different quality levels; it has several distinct regional traditions running in parallel, each with its own tortilla, its own cooking method and its own correct time of day. Ranking a Sonoran flour tortilla against a Tijuana-style shrimp taco is like ranking a bagel against a croissant. What is useful instead is knowing which style you are actually in the mood for, and who does that one thing properly.

Sinaloa on the Coast: the Shrimp Taco
Mariscos Jalisco is the operation that made the fried shrimp taco a Los Angeles institution rather than a regional curiosity. The taco dorado de camarón — a corn tortilla filled with shrimp, folded, fried until it blisters, then topped with avocado and a spoonful of tomato salsa — is the entire argument, and the business was built on doing that one dish consistently for years rather than expanding a menu.
The trucks park in Boyle Heights, downtown, and on La Cienega in Mid-City, which means the answer to where it is depends on the day. The brick-and-mortar in Pomona received a Michelin Bib Gourmand in July 2023 — recognition that arrived a long time after the queues did.
Order two, not one. They are small, they are fried to order, and the second one always tastes better than the first because you have stopped being surprised by the texture.
The Trompo: al Pastor After Dark
Leo's Tacos is the al pastor answer, and the reason it works at scale is that the trompo does. Pork is stacked on a vertical spit, cooked by radiant heat as it turns, and shaved to order with a pineapple crowning the top — which is a cooking method borrowed from Lebanese shawarma and naturalised in Mexico City decades ago.

There are more than a dozen Leo's trucks across the city, which makes this the most available of the styles here and the correct default for a late night. The operational tip is to watch the trompo before you order: if the outer layer has just been shaved, the next cut is from the softer interior and worth waiting sixty seconds for.
The other rule of al pastor is to take the pineapple. It is not a garnish and it is not a gimmick — the acid is what keeps a fatty, heavily spiced pork from flattening out after the third taco.
Sonora: the Flour Tortilla Argument
Sonoratown is the one that changes people's minds about flour tortillas, because most Americans have only met the industrial version. Teodoro Diaz-Rodriguez Jr. and Jennifer Feltham opened a tiny counter in the Fashion District in 2016 doing Sonoran-style beef on flour tortillas made fresh, and opened a second location on San Vicente Boulevard in Mid-City in May 2022.
Sonoran cooking is northern Mexican cattle country food: mesquite-grilled beef, thin pliable flour tortillas, minimal garnish. It is a completely different proposition from a corn-tortilla taqueria and it does not scale the same way, which is why there are two locations rather than a dozen trucks.
What to order first is the chivichanga or a simple carne asada, and to resist adding four salsas. The point of this style is the tortilla and the char on the beef; burying it is a category error.
The Braise: Echo Park's Contribution
The fourth style is the braise, and Guisados at 1261 West Sunset Boulevard in Echo Park is where most people meet it. Guisados means stews: chuck steak in chile, chicken in tomatillo, cochinita, tinga, each spooned onto a thick handmade corn tortilla. It is the only style here that is not grilled or fried, and it is by some distance the best one to eat sitting down.
It runs 9am to 10pm Monday to Thursday, 9am to 11pm Friday and Saturday, and 9am to 9pm on Sunday, with breakfast served daily until noon — a genuinely separate morning menu that vanishes at twelve. Order the sampler on a first visit, because the whole logic of a braise-led kitchen is that the fillings taste nothing like each other.
How to Choose
A decision rule that works: if it is late and you are with a group, go to the trompo. If it is lunchtime and you want to eat something you have not had before, go Sonoran. If it is a hot afternoon and you want one perfect thing, find the shrimp truck. If you want to sit down with people and talk for an hour, go to the braise.
And the general principle: in Los Angeles the interesting variable is regional origin, not price or ranking. Once you start ordering by style rather than by rating, the city's taco map stops being a leaderboard and becomes what it actually is — a set of parallel traditions, most of which arrived here with someone's family and stayed.
