12101 Biscayne Boulevard in North Miami, family-owned and operated since 1974, and the closest thing this city has to an undisputed pizza institution. It is New York-style — a sweet tomato sauce, a crust crisp outside and soft underneath — sold by the slice and by the pie, with a medium pie around the $12 mark. The other thing that makes it structurally useful: the hours. Steve's runs to 2am Monday through Thursday, 3am on Friday and Saturday, and 1am on Sunday, which puts it in a very short list of places in Miami-Dade where good food and late hours overlap. There is a second location further south on US-1 in Palmetto Bay if you are nowhere near Biscayne.
The Roman Square Option
Pizza Rustica sells Roman-style rectangular pizza cut from large trays, which is a different product from a New York slice and, for the money, frequently the better one: the base is thicker and airier, the toppings run further beyond tomato and cheese, and a single square slice is a full meal rather than a snack. The format also happens to be the most forgiving under a heat lamp, which matters on South Beach at 2am when the alternative is a slice that has been sitting since midnight. If you are eating pizza on the beach late, this is the category to look for.
The New-Wave Slice Shops
Miami Slice grew out of a pop-up into a bricks-and-mortar shop in 2022 and represents the newer end of the city's pizza — New York-style, made by people who care about the dough, priced above the strip-mall counters and below anything described as artisanal. There is now a small cluster of similar operations across Wynwood, Little River and the Design District, most of them selling by the slice at lunch and by the pie at night. This tier will not deliver a $2.75 slice, but it will deliver the best pizza you can buy in this city for under ten dollars, which is a different and more useful claim.
The Neighbourhood Counters Nobody Writes About
The cheapest good pizza in Miami is in the strip malls of Hialeah, Westchester, Kendall and North Miami — Cuban-Italian counters that have been feeding families for decades, sold by the slice at prices closer to the bottom of that $2.75-to-$5 range, frequently attached to a cafeteria selling croquetas and coffee at the same counter. No website, no delivery listing, and no interest in being discovered. The test is the same as anywhere else: turnover. A counter selling constantly at 12:30pm is reheating nothing. Delivery apps, comprehensively. A $4 slice becomes an $11 transaction once menu markup, service fee, delivery fee and tip are applied, and pizza is the food that degrades fastest between kitchen and door — you are paying nearly triple for a worse version. Beach-adjacent pricing is the other one: the same slice within two blocks of the ocean runs a dollar or two more, for reasons that have nothing to do with the pizza. And beware the tourist-strip counters that sell enormous slices at a premium; size is the easiest thing in this category to fake and the least correlated with quality.
Where the Pizza Conversation Is Going
Miami's pizza has improved sharply over the last five years and the improvement has come from the top rather than the bottom: wood-fired Neapolitan rooms, natural-ferment doughs, imported flour, prices to match. That is good news for a $30 dinner and largely irrelevant to a $4 slice. The cheap end of this city is still carried by the same counters it always was — family operations in strip malls, a couple of long-running institutions, and the Roman-style trays. If you read a Miami pizza guide that is entirely about sourdough hydration, it is not describing the pizza most people here actually buy.
How to Order Cheap and Eat Well
Order plain cheese at a new place before anything else — it is the only honest test of dough and sauce, and every topping after that is a distraction from what you are trying to learn. Ask for it hot rather than accepting a slice off the case; almost every counter will refire it and almost nobody asks. Buy a whole pie if there are two or more of you, because the per-slice maths flips at around four slices and a $12 pie beats four $4 slices comfortably. And if it is after midnight and you want something genuinely good rather than merely open, drive to Biscayne Boulevard. That is the whole strategy.
