Arrive at 8.15am and the decision is easy. Arrive at 1pm and you are choosing from what is left.
Neighbor Bakehouse at 2343 Third Street in Dogpatch works the same way, 8am to 3pm, and the detail that catches people out is that it closes on Mondays. So does Mama's, at the other end of the city, which means a Monday breakfast plan built from a weekend list will fail twice before you find something open.
The two counters that beat the clock
Devil's Teeth Baking Company at 3876 Noriega Street in the Outer Sunset opens at 7am, an hour before most of its peers, and the thing to order is the breakfast sandwich on a buttermilk biscuit. It is not; it is a weekend phenomenon that spills into weekday mid-mornings.
Mama's on Washington Square at 1701 Stockton Street in North Beach has been family-run since 1964, does not take reservations, closes on Mondays, and runs 8am to 2pm midweek and until 3pm at weekends. The line wraps toward the park and it moves slowly because the room is small. It is one of the few San Francisco waits that people genuinely enjoy, because the queue itself faces Washington Square and you can send one person for coffee while the rest hold the position.
The lever almost nobody pulls
Brenda's French Soul Food at 652 Polk Street is the most useful entry in this entire guide for one reason: it takes reservations. It opens at 8am and serves late into the evening most days, the beignet flight is the order everyone recommends, and yet the default assumption in this city is that any famous breakfast room means standing outside. If your group is four or more, or someone has a train to catch, booking Brenda's converts a ninety-minute morning into a fifty-minute one. That is not a secret menu item, but it is the sort of thing a search result will never tell you.
Where you are standing decides more than what you want
Geography does most of the work here. In the Richmond you are choosing Arsicault and walking your pastry into the Presidio or Golden Gate Park.
