There is a Tuesday at 9 pm that arrives once a month, sometimes once a week, when Resy returns nothing and the apps have all decided the night is full. Resy is wrong. The night is not full. There are rooms across the city that have never lived on the app in the first place, and they take you on a Tuesday at 9 with no app, no waitlist, no friend-of-a-friend. Five of them below.

The criteria are strict. Counter or bar seating that takes a walk-in. A kitchen that's open past 11. A room that does not depend on the booking platform to define itself. Funny Bar in the East Village, Outer Heaven in Bushwick, Carousel in Brooklyn, Nowadays in Ridgewood, Kalimera in Manhattan. Each room covers a different time band and a different borough, which means the heat map below covers the actual city, not just one neighborhood's idea of it.

Use it as a heat map. The earlier in the night, the more permissive these rooms are. By midnight the room you pick depends on which train you're closest to. Bookmark them. The next time Resy fails, you will not have to think; the list is already there.

Funny Bar is the East Village dive-energy counter bar with a kitchen that stays open late, which is rare and worth the membership fee of finding it. Walk in at 9 on a Tuesday and the bar is two-deep but moving, the kitchen is plating fast, and the bartender does not blink when you ask for a stool. The food is good enough to be the meal, not just the snack. Two cocktails and one plate is a complete Tuesday.

Outer Heaven is the Bushwick late-night cocktail counter, the room that begins where the others end. The kitchen runs past midnight, which is the operative fact. The bartender takes the time to mix a real drink even when the room is full. Walk in at 11 on a Tuesday and the room is friendlier than the city has any right to be. Stay for two rounds. The person next to you might become a regular acquaintance, which is the underrated form of friend.

Carousel is the Brooklyn dive bar with pool tables and a kitchen window, which is the right shape for the 9 pm version of a Tuesday. The room absorbs the day's escape velocity at exactly the right moment. You can sit at the bar, you can play pool badly, you can order from the window when the kitchen is open. None of this requires a reservation. None of this requires planning. The bar simply works.

Nowadays is the Ridgewood outdoor disco patio whose kitchen runs all night and whose dance floor begins around the time the kitchen stops being polite. The L line gets you there from any East Village failed-reservation in under 25 minutes. Walk in, eat, dance, leave when you decide. The patio holds the night past most other rooms, which makes Nowadays the anchor of the entire walk-in heat map on the eastern half of the city.

5. Kalimera: daytime walk-in, evening overlap, neutrals everywhere

Kalimera is the Manhattan curated-vintage shop with a cafe counter attached, neutrals on every shelf, light that holds well from afternoon into early evening. Daytime walk-in is the primary use; the evening overlap is the secret. After a Tuesday-failed-Resy at 7 pm, Kalimera is the regroup room. Coffee or a small plate. The room hands the night back to you with options. The shop, by the way, is not a gimmick. People actually buy the sweaters.

  • Kalimera is the daylight room; use it as a regroup, not a destination.
  • If two rooms in a row fail, walk to the third on this list, not back to Resy.
