Dante, World's #1 in 2019, holds the line on MacDougal. Five rooms inside twelve walking minutes — but the question on a Tuesday is not the order. The question is which one for the hour you actually have.

1. Sip and Guzzle: best in the 7-8 pm window, downstairs

Two floors stacked like two arguments about what a cocktail bar should be. Shingo Gokan runs the downstairs serious — ingredient-led, treatise-grade Negroni variations. Steve Schneider runs the upstairs loud, a room that wants you to talk back to it. The grid says start here in the 7 to 8 window: downstairs is genuinely quiet then, the bar two-deep by 8:30, and after 9 the upstairs takes over. By 10 the wait is real. 2. Dante: best in the 8-9 pm dinner pivot

79 MacDougal, a tenant most of the street has not been since 1915. Twelve Negronis on the list, all defended in print, a sidewalk line that does not respond to the weather. The aperitivo hour ends at 8, which is exactly why the grid puts the prime cell at 8 to 9: the kitchen turns over, the room is at its loudest, and the queue has not yet formed for the post-dinner late bar. Show up at 9:30 and you are queuing for the world's #1 of 2019. Show up at 8:05 and you are sitting inside it.

3. Bar Moga: best in the 8-9 pm food window

128 West Houston, technically the SoHo edge of the village but operationally part of the half-mile. The room is Japanese 1920s yoshoku: the omurice that gets filmed every night, the highballs measured to a Tokyo standard. The grid puts the prime cell here in the 8 to 9 food window — kitchen at full pace, bar still seatable, Shintaro Eleazar Tozzo's cocktails precise enough to deserve the lens. After 10 the kitchen slows and Bar Moga becomes a nightcap, not a food stop. This is the only eat cell in the column.

4. Employees Only: best in the 10-11 pm prime window

510 Hudson Street, the room with the fortune teller in the vestibule and the white-jacketed bartenders behind a long mahogany bar. Opened 2004, NA50 #45 in 2026, and the room where Steve Schneider — now running Sip and Guzzle's upstairs five blocks south — built his name behind the stick. The grid puts the prime cell at 10 to 11 for a specific reason: at 7 the booths are still empty, at 8 the kitchen is just turning, by 10 the dining-room hum is at its loudest and the bartenders have hit their stride. After midnight it becomes a different bar — kitchen until 3 am, doors until 4, and the trade itself drinks here. This is the only late cell on the grid that does not need to be booked.

5. Tokyo Record Bar: best at 11 pm, fixed seating

127 MacDougal. One album played front-to-back per seating, paired with Japanese highballs you did not choose either. The grid puts a hard close cell at 11 pm because the room operates on a different time logic than the other four: seatings, not walk-ins. The cells between are gray for a reason — closed for turnover. Book the 11 pm in advance and you have the anchor; miss it and the row collapses to nothing. This is the only column on the grid where booking, not timing, is the lever.

- One free hour, pick by column. 7-8 pm: Sip and Guzzle downstairs. 8-9 pm: Dante or Bar Moga. 10-11 pm: Employees Only. 11 pm: Tokyo Record Bar.
- Four free hours, read across the top row. 7 Sip and Guzzle, 8 Dante, 9 Bar Moga (eat), 10 Employees Only, 11 Tokyo Record Bar. Twelve walking minutes total.
- If three of five, pick by program: Sip and Guzzle, Dante, Tokyo Record Bar. The widest range in three hours.
- Tokyo Record Bar is fixed seating, not a drop-in. The 11 pm cell only works if you booked. Without it, end at Employees Only — kitchen runs until 3 am.
- Tuesday is the forgiving column. Friday and Saturday compress every prime cell by an hour — start the row at 6:30 instead of 7.
Tomorrow Cornelia Street will be the same length and most of the rooms will rank the same way. The grid will not. The hour you have is the only variable the rankings cannot tell you about — which is why this page is shaped like a calendar, not a list.
