White Whale brings together cocktail veterans Daniel Yang, Ceferin Oliva, Walter Cortez, and Evan Hosaka alongside Sam Ross, creator of the Penicillin and Paper Plane. The front bar pours a menu of thirteen original drinks built with house-prepared ingredients. Past a brick door, the back room—Captain’s Quarters—pivots to a nautical hideaway running a collaborative, omakase-style setup, where mixologists forgo a printed list to calibrate custom cocktails and mocktails around individual tastes.
