Founded by Chef Simon Nguyen and his wife Maria Nguyen, the venture was built around a no-judgment approach designed to welcome seasoned vegans and total newcomers alike. Stemming from their care for animals, the environment, and good food, the operation launched around catering and local business collaborations, with an eye toward rolling out a neighborhood food truck.
