Founded in 2017 by Paul Thornton—a former Specialty Coffee Association president—and his daughter Rachel Thornton Verhaalen, the roastery is backed by decades of industry experience. The operation focuses on coffees ranging from signature blends and classic dark roasts to single-origin beans roasted on-site. It is strictly a grab-and-go outpost with no indoor seating and a focused drinks list that skips items like matcha, accompanied by wrapped pastries that can sell out quickly.
