Husband-and-wife founders Matt Levin and Melanie Roth spent two years cooking across Paris at kitchens including Taillevent, Le Pré Catelan, and Les Ambassadeurs at Hôtel de Crillon. The name traces back to an old wine bistrot beside their former Montmartre metro stop. Running the restaurant alongside director of operations Luciano Marquez since 2008, the team shapes the menu around elevating ordinary cuisine through subtle techniques and respected traditions.
