For over three decades, Chef Rossi and coordinator Charmaine have designed a completely new menu for every event. Instead of standard sit-down dinners, service formats range from family-style dining and table-side French service to a signature floating supper. The kitchen plays with unexpected combinations, serving up dishes like pastrami tacos, sweet potato latkes, and chocolate-dipped bacon. The planning relies on direct, collaborative conversations to capture a client's personality and adapt to their budget, aiming for a personal, local feel over corporate templates.
