Talya shaped her background at Springfield's Frigo Foods, serving as general manager and catering coordinator while developing an expertise in pairing gourmet cheeses with cured meats and fine wines. When she relocated to Boston, the Frigo family gave her a parting gift that spent over a decade on their menu: "Talya's Dirty Italian". The sandwich turned into a customer favorite and a longstanding inside joke, ultimately lending its name to her independent storefront and catering operation.
