Founded by the Peacock family in 1992 to recreate small-town Texas barbecue in San Antonio, the setting skips tablecloths and chain-menu padding in favor of pure pit tradition. Mark, Zac, or Jay stands ready to slice it in front of you, serving a local crowd that brings construction workers alongside bank presidents. The focus remains on traditional cuts, led by tender brisket and ribs paired with standout barbecue sauce and sides made fresh daily from scratch.
