Founder Adolfo Torres grew up working in his parents’ taqueria in Tijuana, Mexico, before launching Tacos Calafia as a single Peoria food truck in 2016. The operation has since expanded to multiple locations across Arizona, staying anchored to traditional street-style tacos dressed with fresh guacamole and the family's secret-recipe marinades.
