Established in 1983, the counter draws on chef Aki Kawata’s early training at his family restaurant in Wakayama, Japan. The service moves through sushi, sashimi, and specialty dishes prepared to be pure, simple, and balanced to highlight the natural flavors of the ingredients. Children under 13 are not permitted.
