Description

Named after the Japanese word for "healing" and "peace," the kitchen pays close attention to the mechanics of comfort food. Noodle dough is rolled multiple times in a machine every couple of days to achieve the right texture and chew in the bowl. Broth selections range from the slow-cooked Japanese pork base to a miso-based vegetarian broth, rounded out with the kitchen's own signature soy sauce and dressing.
