Rooted in a two-sister business from the coast of Nayarit, the counter began at a roadside kiosk serving fresh chopped fruit with chili powder and lime. That foundation expanded into smoothies, fruit plates with different toppings, and aguas frescas made from fruit juice, vegetables, cereals, grains, and flowers. Taking design cues from beehive-shaped vitroleros, the space centers on colorful drinks prepared with fresh fruit.
