The name honors the six temporary capitals of the Republic of Texas between 1836 and 1839, a nod to Aurora’s perch along the historic Republic border. That cross-regional identity carries directly into the kitchen, using hyper-local Colorado ingredients for dishes like BBQ mac and cheese, house-made queso, and pork belly sliders. Behind the bar, straightforward beer styles take playful detours—such as a citrus-finished Mandarina Kölsch—supported by a rotating lineup featuring local guest ciders, meads, and spirits.
