Before landing in midtown, the concept built its following through weekly pop-ups starting in 2017. A permanent brick-and-mortar location followed in Rochester in 2019, paving the way for this expansion. The counter represents a scaling up of those upstate origins, bringing the brand's original recipes into a high-traffic food hall setting.
