Description

Started by Juan Ayala and Alexis, Phoenix Coqui evolved from delivering home-cooked meals out of a Honda Civic into a popular food truck before opening its brick-and-mortar counter in 2022. The cooking draws directly on family recipes from Toa Alta, Puerto Rico, featuring island classics such as empanadillas and flan. Alongside the traditional comfort staples, the kitchen also prepares vegetarian, vegan, and gluten-free options.
