The Chula Vista restaurant grew out of a modest Linda Vista room that seated fewer than 50 guests before expanding to accommodate patrons traveling from across the county. Dishes reflect the approach of founder and chef Hiep Phan, who has prepared pho for nearly 30 years with an emphasis on technique that goes well beyond boiling a pot of bones. Fresh ingredients anchor the kitchen's staples, pairing the signature beef soup with vermicelli noodle bowls and broken rice dishes.
