Paolo’s opened in Atlanta during an ice storm in 1999, founded by Treviso native Paolo Dalla Zorza. Bringing a background rooted in a family of chefs and pharmacists as well as studies at the University of Parma, Dalla Zorza focuses on Italian flavors made the old-fashioned way, building recipes around fresh fruits and vegetables.
