Started in December 2020 inside restaurant staple Manolin, founders Joe Sundberg and Rachel Johnson expanded production following an enthusiastic neighborhood response, eventually taking over the whole Manolin space. The counter pairs fresh cream cheeses alongside wild fish locally sourced by Northwest Bounty.
