Modern Korean Plates Get an Early Downtown Start

Taste fire roasted cauliflower and bone marrow with sourdough at Chan Seattle as the evening begins.

Start with dinner at Chan Seattle.

🍽️ Korean Cooking in View

Start the evening at Chan Seattle, inside the Paramount Hotel at 724 Pine Street in downtown Seattle. The restaurant brings modern culinary techniques to traditional Korean flavors, with an upscale approach that gives the hotel dinner a different sort of ambition.

Fire roasted cauliflower and bone marrow with sourdough sit alongside bulgogi sliders, fried chicken and rice cakes. That is quite a range for the table to negotiate before anybody even thinks about wine. Carefully paired wines accompany the meal, and the layout lets diners watch the chefs at work. Watching the cooking gives dinner its own live entertainment, without adding another stop to the evening.

Service runs Tuesday through Thursday from 4 PM to 9 PM and Friday and Saturday from 4 PM to 10 PM, with Sunday and Monday closed. Reservations go through Resy, making an early downtown start something you can put in the calendar.
