Conceived by owner Su-Mei Yen, the kitchen draws on heritage techniques from Taiwan's tea mountain regions alongside preparation methods learned from her grandmother and Madame Jiang. The resulting dishes balance contrasting textures and aromas, pairing ingredients hand-selected from the Chinese market with tender Berkshire pork across all pork preparations.
