Description

Charles Asselbaye founded the Honolulu roastery in 2015 after training as a roastmaster at Peet's, bringing a background rooted in France and Central Africa. The roasting process runs for 12 to 20 minutes at 180 to 240 °C, managing temperature and humidity to reduce acidity and make the coffee more digestible. Located near Chinatown, the dog-friendly cafe pairs retail bags of beans with drinks poured with detailed latte art, alongside a front seating area catching breezes off the water.
