Chef Pasquale “Lino” Di Diana started out at age 14 in the family shops that brought Schiller Park its 20-year Jumbo Slice. Alongside his wife Giovanna “Lucia,” he refines those traditions following study with pizza instructors worldwide. The room carries the feel of a low-key NYC diner, arranged so guests can watch the food being prepared up close. It remains an earnest, family-run counter where longtime technique anchors everything from the house appetizers to the dough.
