Beverage Director Jelena Prodan drew on her Balkan roots and European travels to shape the room as an old-town hideaway built for exploration. Drinks lead the experience: every wine is available by the glass to encourage sampling unfamiliar bottles, accompanied by Southern European spirits and cocktails like an Albariño-based martini.

Chef Gillanders supplies dishes tailored to the glass, featuring a burger au jus, fried chicken sandwiches, and fernet ice cream, alongside access to the full S.K.Y. menu.
