Chef and owner Pepe Barajas opened the restaurant in May 2017, naming it in honor of his late aunt Josefina Villegas. The kitchen prepares creative dishes connected to Barajas’s home state of Jalisco—the birthplace of tequila. Drink orders center on an extensive “Agave Bible” drink menu poured across three agave bars, including one on the rooftop.
