Founded on Oahu in 1988 by Il Man and Sam Soon Chung, the restaurant originally opened as a dine-in spot named after Hawaiian Koa wood. In 2001, the business expanded into a fast-casual format designed around quick service and reasonable prices across multiple locations. Today, their son Juno Chung oversees operations, pairing morning staples with omelettes and traditional Hawaiian lunch plates.
